REPEAT 3-501.15: Observed egg rolls and coleslaw prepared 1-2 hour ago at the commissary were cooling in tightly fitted lids, stacked on top of each other. Quickly cool foods. Use open/vented shallow pans, large ice baths, and active stirring methods. Cold air must flow around the product to remove the heat. Pf CDI: Lids were removed from eggrolls and slaw. |
