3-304.12 In-Use Utensils, Between-Use Storage (C)
EHS questioned how long in use utensils are being stored for. The PIC stated that in use utensils are being stored at the same frequency at which the food is held which based on labeling could be longer than 4hours based on the foods present during inspection. In use utensils shall be stored on a clean portion of cooking equipment. If both the in use cooking utensils and food contact surface are sanitized every 4 hours. EHS educated PIC on proper in-use utensil sanitizing practices for extended use. |
