3-501.16 (A) (2) and (B) Time / Temperature Control for Safety Food, Hot and Cold Holding (P) REPEAT The facility was holding in-housemade sauces in an improper ice bath at the makeline, with containers not fully submerged in ice. Items stored in the lower reach-in of the same unit had an ambient temperature of 45F. A large container placed on the top shelf was blocking the airflow. Several items in the walk-in cooler were holding ambient temperatures between 45- 50F. The walk-in cooler door had been left open for an extended period while an employee grabbing items for prep. Maintain all cold TCS food at 41F or below. CDI, the in-housemade sauces was placed in the freezer to rapidly cool and than placed back on to appropriate ice bath. Deltratrak placed in the walk-in cooler and the door was shut for an extend period and the ambient temperature reached 41F.

4-205.10 Food Equipment, Certification and Classification (C)-REPEAT Facility is using milk crates as storage shelving. Facility has is holding opened packages in the glass reach-in cooler. Per manufacture instruction, the unit is ONLY FOR PACKAGED PRODUCT. This unit is okay for opened package items, once the items is opened it should be stored in another unit. No prepared or cooked items should be storage in this unit as well. Except for toasters, mixers, microwave ovens, water heaters, and hoods, FOOD EQUIPMENT shall be used in accordance with the manufacturer’s intended use and certified or classified for sanitation by an American National Standards Institute (ANSI)-accredited certification program. Obtain dunnage racks or other ANSI approved shelving. 4-501.11 Good Repair and Proper Adjustment - Equipment (C)-REPEAT The walk-in cooler door is damaged around the frame, the gaskets, and the door itself. The facility installed a door seal, but it has become worn and tacky. Several torn gaskets were observed throughout the facility, particularly on the chef’s drawer. The floor panel inside the walk-in cooler needs to be resealed, and multiple walk-in cooler plugs are missing. EQUIPMENT shall be maintained in a state of repair and condition that meets the requirements. (B) EQUIPMENT components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications.
