Date mark all TCS foods that are ready-to-eat once opened or prepared and held more than 24hrs. Pf CDI All TCS foods with no date marks were date marked during the inspection or voluntarily discarded by the PIC.

5-402.14 - Removing Mobile Food Establishment Wastes: Observed there was not a hose for the sewage hooked up to the unit. The PIC stated they empty the sewage into a bucket and pour it from a bucket into a clean out pipe at the garage building. Sewage and other liquid wastes shall be removed from a mobile food service unit at an approved waste servicing area in such a way that a public health hazard or nuisance is not created. Pf CDI Went over the SOP for this unit with the PIC. |
