CDI: Per PIC sauce in the under counter refrigerator was prepared 2 days ago and sauce in the walk in refrigerator was prepared on Saturday therefore both were date marked during the inspection. Horchata in the reach in refrigerator was prepared on Saturday but was voluntarily discarded during the inspection due to its temperature being above 41F.
3-501.18 Discard the food requiring date labels once time/temperature window has expired, if it is not been labeled, or if the label is incorrect. -P Observed cooked chicken in the cool drawer with a prepared date of 5/19. CDI: Chicken was voluntarily discarded since it was prepared over 7 days ago. |
