The hotdogs on the bottom were at 140-145F. The PIC was able to stir the hotdogs and ensure they were able to get to 135F and hold at 135F or hotter. Reminder: -Proper cooking temps of pre-made foods from the manufacturer (canned chili, hot dogs and nacho cheese) is 135F. - These same foods must be able to hold at 135F or hotter until they are sold. Time/temperature control for safety foods shall be maintained at 135F or above.

Plain bleach was not availble during the inspection but, was provided during the inspection and sanitizer was made up in the second compartment of the two compartment sink.
