Observed no paper towels at handwashing sink in dish washing area. CDI PIC provided paper towel for sink. |

3-304.12 In-Use Utensils, Between-Use Storage (C) During pauses in food preparation or dispensing utensils shall be stored in the food with their handles above the top of the food, on a piece of clean equipment, underneath running water with a sufficient velocity to flush food particles, in a clean protected location, or in a container of water if the water is maintained at 135F and above. Utensils for mac and cheese, mashed potatoes, gravy, and rice were sitting in soiled water at 78F. CDI PIC removed utensils from soiled water and replaced utensils. Unit used for holding utensils is broke and needs to be repaired. |
