4-202.11; Priority Foundation; A metal pan on the clean equipment shelf had a visible crack on the side. Multiuse food-contact surfaces shall be smooth, free of breaks, open seams, cracks, chips, inclusions, pits, and similar imperfections. CDI- pan was discarded by PIC.
4-501.11; Core; Gasket on walk-in cooler door is torn at the top. Evaporator pipe in walk-in freezer is leaking and water is accumulating and freezing below. PIC has already placed a work order. Equipment shall be kept in good repair. These items were not noted on previous inspection. No point taken today. |

4-601.11 (B) and (C); Core; The tops of some hot holding and refrigeration equipment have dust accumulation. Dust balls were observed on top of the oven. The nonfood-contact surfaces of equipment shall be kept free of dust, dirt, food residue and other debris accumulation. Increase cleaning frequency. All other surfaces observed clean. Full point may be taken for repeat violations on future inspection. |
