3-501.17 Date mark all ready to eat TCS foods prepared onsite and held for more than 24 hours. Pf Observed empanadas that had been thawed in WIC 1 day ago that had no date marking. CDI- PIC date marked thawed empanadas.
3-501.18 Discard the food requiring date labels once the time/temperature window has expired, if it is not labeled, or if the label is incorrect. P Date mark required foods are allowed a max 7 day shelf life. Observed a large number of date mark required foods in WIC, prep cooler, and FOH dressing cooler that were between 8 and 21 days old including: TCS pizza sauce, ham, sausage, ground beef, TCS guacamole, salsa verde, and house made ranch dressing. Also observed TCS pizza sauce improperly date marked for 6/18 that was actually prepared 6/13. All out of date foods voluntarily disposed of by PIC. Observed lettuce in prep cooler with no date. CDI- PIC voluntarily disposed of lettuce. |
