General CommentsPIC met demonstration item #1 by answering EHS questions from 2-102.11 Observed grade card not posted during visit. PIC said it was damaged. NC Law requires grade card be posted and visible at all times of operation. If grade card is lost or stolen contact ICHD to provide a replacement. EHS provided new grade card that was properly posted. In the future, if grade card is not posted, facility can face penalties including permit action.

P Date mark required foods are allowed a max 7 day shelf life. Observed a large number of date mark required foods in WIC, prep cooler, and FOH dressing cooler that were between 8 and 21 days old including: TCS pizza sauce, ham, sausage, ground beef, TCS guacamole, salsa verde, and house made ranch dressing. Also observed TCS pizza sauce improperly date marked for 6/18 that was actually prepared 6/13. All out of date foods voluntarily disposed of by PIC. Observed lettuce in prep cooler with no date. CDI- PIC voluntarily disposed of lettuce.
