4-101.11 (A) - (E ) Food contact surfaces shall be (A) Safe P, (B) Durable, Corrosion-Resistant, (C ) sufficient in weight and thickness to withstand repeated washing (D) Smooth and easily cleanable, and (E) Resistant to damage. Observed utensils with stickers on the handles. These stickers shall be removed to allow the utensils to be throroughly washed, rinsed, and sanitized. PIC placed the utensils to the side so he can remove the stickers. CDI. |

4-601.11(C ) Keep non food contact surfaces of equipment clean to avoid build up of dust, food residue or debris. 4-602.13 Non food contact surfaces of equipment shall be cleaned frequently to preclude accumulation of soil residues. Advised the PIC that around the dish machine the drainboards could use a wipe down. There was not any food debris left but there were water residue and deposits on the stainless steel. Let him know to clean this frequently to avoid the build up. |

6-501.14 Change the filters and clean the intake and exhaust air ducts so they are not a source of contamination by dust, dirt or other materials. There needs to be a filter in the ceiling vent. PIC said he will put a work order in for this. Advised PIC to be careful storing pots, pans, and other cooking equipment under this vent as this could be a source of contamination. |
