CDI, PIC was provided a vomit and diarrheal clean up plan.

P *** Observed PIC handle raw chicken wings to cook them in the fryer. PIC removed glove but continued to place egg rolls with premade chicken without washing hands. The outside of the egg rolls container was contaminated. Spoke to PIC about proper handwashing. PIC washed hands immediately and re-gloved their hands. Egg rolls container will be washed at the commissary, CDI.

P *** Rice measured at 50F and egg rolls measured at 51F in the 1 door reach in cooler. PIC voluntarily discarded rice and egg rolls. PIC shall find a bigger inverter or use the generator while in transit to events. PIC stated the 1 door reach in cooler was at 85F after arriving at the location. There will be a 72 hour verification conducted by 6/29/2026.
