General CommentsExtra time taken with new manager for food code guidance and correction Not approved to add raw chicken or shrimp to the menu. All menu and equipment changes must be approved by Pender county Environmental Health Transitional Permit Reminder: Repair and seal floors in food areas and restrooms. -The floor and wall junctures shall be coved and sealed. Add cove molding along the base of the kitchen wall. -Repair and fill holes in ceilings, walls, and around doors to prevent entry of pests. This includes the hole around the light fixture in the women’s bathroom, and under the sink in the men’s room. -Repair light gap at the rear entrance. -Add wheels, raise, or seal equipment bottoms to allow adequate cleaning. -Add sufficient barriers to protect the septic drain field from traffic and other damage. -Replace the wooden shelves used for dishes with an easily cleanable shelving material such as stainless steel. -Intensity shall be at 50 Foot Candles or greater in food preparation areas. 20 F.C. or greater in the bathrooms, and 10 F.C. or greater in dry storage areas. -Obtain a Certified Food Protection Manager certificate within 210 days of permitting.

She then proceeded to set up to-go containers without removing gloves or washing hands. When instructed to wash her hands by the PIC, she turned water off with her bare hands. Use a barrier such as a paper towel to turn the faucet handle back off to avoid recontaminating hands. Raw pork chops observed over cooked ham, sausage over corn dogs, raw eggs over condiments, flour breader for pork chops over BBQ, uncooked bacon over bologna and other RTE foods. An pan catching drips in the 2 door reach in cooler was partially filled with old, smelly condensate water with floating bits in it, and it was stored uncovered above RTE foods. Foods shall be separated based on required final cooking temperature with RTE foods on the top and raw chicken at the bottom. CDI - There is already a stacking order poster with pictures on the tall 1-door reach in. Provided another printed copy for the 2 door reach in. PIC corrected stacking order violations during the inspection. Recommend moving back up supply of ground meats from the overstocked 1 door reach in to the 2-door unit
