3-501.19 Time as a Public Health Control (P) (Pf)- Ensure that all foods held under time (that will be discarded at the end of the service day) are listed on the TPHC form. All foods held under Time instead of temperature (not maintained at 41 F or 135 F or above) must be listed on the form daily.
