3-501.17 Ready-To-Eat Time / Temperature Control for Safety Food, Date Marking (Pf)- There was a pan of left over taco beef in the reach in cooler from Friday that had not been date marked. The beef is going to be used tomorrow. All prepared / opened ready to eat foods held for more than 24 hours must be date marked.
CDI- The manager date marked the pan of beef and is using it tomorrow in a recipe. |

3-305.11- There are many cans and boxes of food stored on the floor in the dry storage room. The facility does not have adequate storage space or shelving for all the commodity foods being delivered. Store food in a clean, dry location, not exposed to contamination. Keep at least 6 inches above the floor.
Must provide more shelving and or palates for storage of bulk foods. |
