General CommentsNote: Final cook temperature was taken for pizza since employees don't use gloves when handling pizza toppings. If food temperature reaches 145F, gloves are not necessary. Papa Johns has a variance for pizza sauce left at room temperature for up to 10 hours. Sauce was observed labeled accordingly upon arrival. All produce and raw animal foods arrive ready-to-eat according to PIC.

Have interior of pizza oven cleaned more frequently to avoid excessive build-up of food debris/residue. All other surfaces observed clean. Full point not taken.
