4-601.11 (B) and (C); Core; Mechanical rollers and the area under the rack inside pizza oven are heavily coated in food residue. PIC states that Papa Johns contracts with a third party contractor to clean the interior portions of pizza oven. The nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue and other debris accumulation. Have interior of pizza oven cleaned more frequently to avoid excessive build-up of food debris/residue. All other surfaces observed clean. Full point not taken. |
