All food must be pre-chilled from the commissary prior to storing on the truck. Hot foods must hold at 135 or above until they can be properly cooled at the commissary. Watermelon juice was made on the unit prior to today’s inspection. Additional equipment such as a Blast Chiller may be obtained to allow for the cooling of menu items such as watermelon juice. Permit action will be taken if cooling violations continue.
