General CommentsObserved no CFPM present at time of inspection. Facility still within 210 days of new permit issuance. No CFPM required. No violations marked today. EHS educated PIC on ensuring someone with a CFPM is present at all times of day while kitchen is open. EHS observed multiple items in freezer taken out of original container and placed into other containers. Upon discussion, PIC stated that no items are thawed during this process, that items are kept frozen and taken out of original containers and placed back in freezer. EHS educated PIC on ensuring that if items are fully thawed before being placed back in freezer, they must be date marked. EHS educated PIC on proper date marking system (7, not 10 days and ensuring that prep/open day is counted as day 1). Smash burgers are on menu but facility is currently not selling any and items were not observed at time of inspection. PIC stated that if facility does add them to the menu, they would be received in a precooked form.
