3-501.17 Date mark/label all TCS foods that are ready-to-eat once opened or prepared and held more than 24 hours. (Pf) Observed several foods with no date marking. PIC stated they were made the day before. Corrected PIC added a date.
Note: Date marking has been a reoccurring issue management needs to work with kitchen staff to ensure all are trained on date marking requirement. While all violations were corrected EHS will make verification to ensure compliance. |
