Light intensity shall be: 50 fc at a surface when working with food, or working with utensils or equipment such as knives, slicers, grinders, or saws where employee safety is a factor.
Lighting over cooking and prep area measured between 30-50fc. Lighting shall measure 50 fc over work spaces.
