General CommentsMFU inspected at 7201 IBM Dr. Charlotte (VXI Global Solutions parking lot). EHS observed steak cooling in RIF on truck which PIC stated was cooked on the truck and placed in freezer to rapidly cool. EHS reminded PIC that permit conditions prohibit cooking and cooling on mobile food unit and must be done at commissary. PIC stopped the cooling process and placed back on the grill to reheat for immediate use. Per conversation with PIC, raw salmon was cut up on the truck. EHS reminded PIC that processing raw meat/seafood on truck is prohibited due to lack of prep space per permit conditions. PIC agreed not to process raw meat/seafood in future.
