3-304.14(B) Hold in-use wiping cloths in properly concentrated sanitizer between uses.
Sanitizer in wash rag bucket was week. Owner refilled the sanitizer bucket with fresh sanitizer from the sink at the correct concentration. Dishwashing employee was instructed to allow dishes and utensils to dry before stacking. |
