4-501.114 Manual and Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration and Hardness (P) - Tested dish machine at 0ppm chlorine a few times; per discussion with PIC, this happened earlier this morning as well, and was fixed to dispense properly, no dishes washed during inspection. Chemical sanitizer used for sanitizing food contact surfaces shall be maintained at proper concentration. CDI PIC adjusted and fixed machine to dispense at time of inspection; employees regularly and continuously test machine for this reason.
Since this is an ongoing issue, suggest contacting technician for more permanent fix. |

3-305.12 Food Storage, Prohibited Areas (C)- Observed defrost ice buildup in 2door reach-in freezer on some food packaging. Food shall be protected from contamination by storing the food in a clean, dry location, where it is not exposed to splash, dust, or other contamination. Food may not be stored under leaking water lines (including leaking water lines on which water has condensed). |

4-501.11 Good Repair and Proper Adjustment - Equipment (C) - Observed moderate defrost ice buildup in reach-in freezer. Noted a few areas of shelving inside walk-in that are showing signs of rust. Re-seal back hand sink and 3comp sink where caulk is separating. Equipment shall be maintained in good repair and at proper adjustment.
Continue to clean out water lines to prevent buildup. May need to replace water lines to prevent continuous leaking.
General Comment: keep an eye on walk-in ceiling where condensation water observed dripping in walkway area (noted people were in and out of walk-in continuously for a short time to include prep time). |
