3-501.15 Quickly cool foods. Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. -Pf - Observed sausage patties and boiled eggs cooling from breakfast service in RIC tightly covered with Saran Wrap. CDI- items uncovered and EHS educated on proper cooling methods such as leaving foods uncovered while cooling and utilizing the WIC.
