A food establishment must have written guidelines for employees to follow when such events occur to ensure proper containment and minimize exposure of food, surfaces, employees, and consumers to contamination.

4-501.114 Manual and Mechanical Warewashing Equipment, Chemical Sanitization Temperature, pH, Concentration, and Hardness (P)
The sanitizer was not dispensing at the three-compartment sink, and the concentration measured 0 ppm.
A chemical sanitizer used in a sanitizing solution for manual or mechanical warewashing must meet the criteria specified under 7-204.11, be used according to EPA-registered label instructions, and comply with 4-501.114 (AF).
(D) If another chemical solution is used, the permit holder must demonstrate to the regulatory authority that it achieves sanitization and is approved.
(E) If a chemical sanitizer other than chlorine, iodine, or quaternary ammonium compound is used, it must be applied in accordance with the EPA-registered label instructions.
CDI - The facility will use chlorine sanitizer until the dispenser is repaired. Verification is required in 3 days. |
