General CommentsSpring rolls had been cooked and left in the fryer basket. When checked, the spring rolls were 120 degrees. When re-checked the spring rolls had been placed back into the grease and were 135 degrees. PIC stated they cook multiple spring rolls in anticipation of having several orders. Maintain foods at 135 degrees or higher or 41 degrees or lower. Employee rinsed shears at the 3 compartment sink and placed them onto the hook to dry, as if clean. When asked, PIC stated the employee said that he had washed and sanitized the shears earlier in the morning and once dry, rinsed them off to hang them up. Make sure all food contact surfaces are being washed, rinsed and sanitized in sanitizer at the 3 compartment sink or in the dish machine.

When rechecked around 12Pm, noodles were 70.0 degrees. CDI- Noodles were stored in a deep pan and were placed into a sheet pan to allow to cool more rapidly.
