General CommentsObserved PIC breading raw chicken on MFU. Breading is occurring on left interior side of steam table directly next to fryers. A reduced menu is being offered such that no vegetables are being hot held in steam table. No divider observed installed between left and right side of steam table. Hot holding of vegetables is prohibited in steam well due to area being used for raw meat prep. MFU permit to be amended today to allow approval of limited menu and raw meat prep on MFU. PIC stated sauces, beer cheese, and jerk chicken (baked at the commissary) are the only items hot held in hot box. Fries, smash burgers, jerk chicken, and chicken tenders are the only items on the approved limited menu. Changes to menu or processes requires prior written approval from MCHD. Inspection completed at 495 N Tryon St, Charlotte, NC 28202.
