General CommentsFacility makes yogurt in house occasionally (per PIC) for chicken marinade. During VR visit, PIC has agreed that he will have a written recipe for review by EHS of how the yogurt is prepared. Per discussion today, recipe and methods are in compliance with the Food Code. During inspection, EHS discussed with PIC extensively about allergens and cross contamination with cashews in house including not reusing containers that had cashews for other items such as spices and about using new utensils when this product is used. EHS also discussed with PIC how to establish a proper date marking system including dates on products reflecting the preparation date, as well as if the product is thawed, and that all containers of TCS products shall have the date on them.
