Observed brown gravy, eggs, mac and cheese, and saw mill gravy all in upright reach in cooler next to the walk in freezer with no date markings. Also observed sausage, hot dogs, and cheese in the prep bottom without date markings. All TCS ready-to-eat foods shall contain a 7 day date marking with day one being prep date; food shall be discarded at the end of the 7th day. CDI-employee discarded foods. |

3-304.12 Store in-use utensils in a clean, dry place, in food with handles out, in 135F or greater water or in running water which quickly moves food particles to the drain. Observed ice scoops being kept on top of the ice cream case in water measuring 68°F. An in-use utensil was also seen resting on a cardboard box in the raw chicken and drink cooler, and additional utensils were located near the handwashing sink where they could be exposed to splash. In-use utensils should be stored on a clean, dry surface that can be cleaned and sanitized every four hours, or in water maintained at 135°F or higher, and positioned so they are protected from potential contamination, including splash from the handwashing sink. |
