General Comments

PIC stated that they were delayed in beginning operations (parking issue). The PIC had foods placed in the RIF before inspection began in order to cool foods that had warmed above 41F from the delay in operations. After taking two temperatures, the foods were cooling at a rate slightly above the minimum .12F/min when cooling from 70F-41F. PIC is very knowledgeable about food safety and keeps the food truck in a clean state.
