General Comments

Thermometers calibration checked in ice bath; both read 32F EHS cleaned and sanitized thermometer and probe at start and throughout the inspection. The HACCP plan was completed, and the rice acidification log was being maintained daily. All TCS foods was not actively cooling were held at 41F or below. All areas designated for AFC Zenshi were clean, and items were properly stored. The sanitizer solution measured within the correct concentration range, and all containers were in good repair and fully dry before stacking. Observed excellent handwashing practices implemented by staff.
