3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P EHS observed chicken wings, mashed potatoes, corn beef hash, and sliced corn beef in WIC above 41F. PIC stated truck order had arrived earlier this morning and was put away, and that the door to the WIC was left open. EHS advised to minimize the time the door is open to ensure ambient temperature can be maintained. PIC stated temperatures were checked at 9am and everything inside WIC was 41F and under. PIC removed items from WIC and placed in WIF open to allow for quick cooling. EHS verified temperatures of these items were below 41F by the end of inspection. ***Risk control plan not needed. Facility has improved greatly from last inspection. EHS will conduct a 3-day VR to ensure cold holding is in compliance and to confirm a risk control plan is not needed**. (3) REPEAT.
