General Comments

NOTE: When EHS came in facility was getting ready for a very large event. Facility has approximately 10 trays of beef crostini's made and held out on the prep tables. Employee had begun preparing them 2 hours prior. Employee had several more to make for the night. EHS recommended placing the trays in the walk in cooler after each is completed. All trays moved to the walk in cooler. EHS recommends purchasing an additional speed rack to move the amounts into the walk in efficiently. Facility has several other appetizer items, filling all reach in coolers and the walk in. All temperatures were 41F and below. Walk in cooler was set at 35F. Beef crostini's quickly began to cool.
