Main prep/display unit was at the end of the defrost cycle during inspection. EHS observed prep unit actively cooling down post defrost cycle, along with all foods in unit cooling down hastily. Prep unit and display are connected and run off of the same condenser. Establishment keeps thorough cold holding logs and does not show a history of cold holding issues.
