Quickly cool foods. Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. CDI: PIC spread lettuce onto sheet pans and placed back in walk-in without covers. PIC relocated tuna salad to walk-in cooler and removed cover. |
