2-301.14 When to Wash (P) Education of employee hand washing is still needed. Employees observed handling raw pork and raw chicken, then entering and exiting the coolers, returning to the stations to handle other food pans and not washing hands. Employee observed sweeping the back area and not washing hands before handling containers of food. Employee observed leaving the restroom and entering the kitchen to package food without first washing hands. Hands must be washed, at the hand sink only with soap and water, ant time they are considered contaminated or dirty. Wash after handling raw meats and before doing any other task. After sweeping or cleaning and before handling food/food containers. Upon entry to the kitchen from outside or the bathrooms, and before handling anything in the kitchen. CDI with education. |

In the walk in cooler, a cut cabbage is placed directly on shelving, raw shell eggs are stored above ready to eat foods, and containers of food on the floor. Cooked pork is being placed in direct contact with the boxes that were used to transport bags of raw chicken. Cut jugs are being used as food scoops. Continue to work on food storage and handling. Vegetables cannot be stored/placed in direct contact with shelving. Place in a covered food storage container. Raw eggs must be stored below the foods that are ready to eat. All containers of food must be stored on shelving that is a minimum of 6 inches above the ground. Provide additional shelving in the walk in cooler. A box or bag that was once used to hold a raw meat in cannot be used for any other purpose. Dispose of them once the original food is removed from them. Remove all cut jugs from the facility, they cannot be used as a scoop for food. Use a utensil that is manufactured for food contact and can be clean and sanitized. |
