3-501.16 (A) (2) and (B) Time / Temperature Control for Safety Food, Hot and Cold Holding (P) Ranch in ice bath at serving station at 48F at top of container. Container was sitting on top of ice bath. The ice bath was in a container that was the same size as the container the ranch was in. Use a bigger container for the ice bath so that the ranch container can be 41F or below throughout the whole container. CDI PIC switched out ice bath to correct size. Monitor to make sure stays at 41F or below. |
