General CommentsREHS and PIC discussed steak cooking methods. Facility buys whole muscle in tact steak. Invoices and product specifications on purveyor website verify that product has not been mechanically tenderized. Steak is cooked to achieve a visible color change. PIC could not confirm if it reaches an external temperature of 145F, however steak reaches an internal temperature of 130F. REHS advised PIC to take an external temperature the next time steak is cooked to verify it meets the definition of 3-401.11(C). REHS to follow up.
