General Comment: 20) Observed sushi rolls above 41F and still in the cooling process in the customer display case. These items were observed cooling at proper rate during inspection, however it is recommended that all items be cooled to 41F or below prior to placing in these units. HACCP Verification Conducted: Monitoring records reviewed from the following dates: 6/11, 5/3, and 2/19. All items observed to be in compliance. No revisions to Critical Limits or CCP Summary noted.
