General CommentsEHS asked PIC/owner if food employee working on MFU had CFPM as food employee was present at start of inspection. PIC stated yes and pointed to the one hanging in the window. Name on CFPM did not match name that had been told to EHS at start of inspection. PIC/owner stated that food employee’s name was not the same name that was told to EHS at start of inspection. Once food employee completed taking an order, EHS asked food employee if CFPM belonged to her and she stated it did not. EHS educated PIC about duties, especially around date marking. PIC should be checking dates daily, ensuring items are properly date marked and throwing out items that are past date mark. EHS educated PIC to ensure that once containers are empty, the stickers are being removed and they are being W/R/S.
