Educated employee on proper handwashing procedures and they rewashed their hands for at least 20 seconds. 2-301.14 When to Wash (P) - Observed employee handle raw ground beef patties with gloves on then handle seasoning shakers and cooking utensils without removing their gloves. Employee was not going to change gloves until I asked them to during the inspection. The employee changed their gloves and then handled buns without washing their hands. Employees shall wash their hands when switching between raw food handling and handling of ready to eat foods. Employee shall remove gloves before handling seasoning shakers and cooking utensils if they handled raw meats with those gloves. Employee changed gloves during inspection and sanitized seasoning shakers and cooking utensils.

Employee put sausage links in walk-in cooler during inspection. The sausage was 51F. Cold held TCS food shall be maintained at 41F and below. Employee stated the sausage had been on the counter for 1 hour, sausage was cooled inside walk-in cooler. Keep box of sausage in refrigeration between uses.

Observed several wiping cloths stored on shelving below grill with oil/debris on them, store clean linens in a protected manner. 4-803.11 Storage of Soiled Linens (C) - Observed soiled wiping cloths on ground outside back door. Stored soiled linens in a bag, container, or bag that can be laundered.

Linens shall not be used as liners. 4-202.11 Multiuse food contact surfaces shall be smooth, free of open seams, cracks, chips, pits, sharp internal angles, crevices and assembled to allow access to clean. -Pf- Observed several plastic lids for food containers that were cracked. Food contact surfaces shall be smooth and easily cleanable. Have lids discarded and replaced.
