3-304.12 In-Use Utensils, Between-Use Storage (C)
A scoop without a handle was in the flour. All scoops must have a handle and have the handle stored out of the product.
A container of sanitizer with knives was set out to use to cut foods and then placed back into the sanitizer. The employee showed me how they do it and that the knives are wiped down before cutting. When storing knives between uses, they must be stored in a clean space, in water at 135F or higher, and or must be washed/rinsed/sanitized before using again. They can not be stored in sanitizer and the wiped down before use.
