Bowls were taken to the wash area to be washed, rinsed and sanitized. Ice guard present with pink algae and microbial growth in direct contact with ice. Ice in contact with algae was voluntarily discarded and ice guard was washed, rinsed and sanitized during inspection. Food-contact surfaces shall be kept clean. 4-501.114 Manual and Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration and Hardness (P) Chlorine sanitizer at warewash machine was empty and the concentration of the sanitizer in the warewash machine was less than 50ppm. No replacement sanitizer available. Sanitization must occur at 3 comp sink until the sanitizer at warewash machine is replaced. All items that had been in the warewash machine were re-sanitized at the 3 comp sink during inspection.
