6-501.11 Repairing - Premises, Structures, Attachments, and Fixtures - Methods (C)
Some worn grout /caulking areas under the small hood floor line. Regrout along the rear of the cook line. Clean the walls along the ware wash wall tile surfaces. Clean the floors along the counters, makelines and wall edges. Clean the floors along the back side of the cook line. Re-track the slip lines inside the walk-in-cooler that are worn. Some surfaces of the floors are slightly worn. Replace soiled ceiling tile in the storage area. Walls, ceilings and floors are to be clean and in good repair. Minimal areas observed in need of cleaning or repair.
