3-304.14(B) Hold in-use wiping cloths in sanitizer between uses.
Upon entry of the kitchen, EHS observed several wet wiping cloths hanging from the sides of the prep tables. EHS informed the PIC that all wet wiping cloths should be stored in either a bucket or sink with sanitizing solution. The PIC placed the wiping cloths in the 3 comp sink basin of sanitizing solution. The hood panels above the stove was observed with built-up visible grease residue on it. Nonfood contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Cleaning is needed. |
