A handwashing sink must be maintained so that it is always accessible for employee use and may not be used for any purpose other than handwashing. CDI, The PIC was educated on norovirus and the importance of proper handwashing.

However, several items in the flip-top unit (see temperature log) were observed above 41°F. The REHS placed a Deltatrak thermometer inside the unit for approximately 15 minutes, and it continued to hold temperatures above 41F. All cold TCS foods must be maintained at 41F or below. CDI, The REHS educated the PIC on TPHC. All items were still within the time frame and were relocated to the tall reach-in cooler. The PIC opted to implement TPHC for items stored in the flip-top unit. Maintained at half due to improvements
