Time/Temperature Control for Safety (TCS) foods shall be maintained at 41 F or less. CDI: Milk (holding in cooler after delivery for less than 4 hours per conversation with PIC) was moved to walk-in cooler for rapid cooling and then measured 41 F within 4 hours of having been received. All other TCS foods being held cold throughout establishment measured 41 F or less at time of inspection. |

4-301.11 Cooling, Heating, and Holding Capacities - Equipment (Pf): Left milk cooler at front line unable to be used for cold holding as unit is unable to hold TCS foods at 41 F or less resulting in decreased capacity for cold holding. Equipment for cooling food and holding cold food shall be sufficient in number and capacity to provide food safe food temperatures. VERIFICATION REQUIRED: REHS shall return on 04/17/2026 to verify that left milk cooler is able to hold TCS foods at 41 F or less after repairs are completed. 5-202.14 Backflow Prevention Device, Design Standard (P): At outside canwash, water hose with pistol grip attached was being stored attached to faucet where only backflow prevention device designed for atmospheric pressure was present. A backflow prevention device installed on a water supply system shall meet American Society of Sanitary Engineering (A.S.S.E.) standards for construction, installation, maintenance, inspection, and testing for that specific application and type of device. CDI: Water hose was detached from faucet, creating sufficient air gap for backflow prevention. Staff advised to install backflow prevention device designed for continuous pressure at faucet where hose with pistol grip is to be attached. |
