3-501.15 Cooling Methods (Pf) - The corn/beans (44 F) and the mixed fruit (63 F) in the 2-door upright cooler. (A) Cooling shall be accomplished in accordance with the time and temperature criteria specified under § 3-501.14 by using one or more of the following methods based on the type of food being cooled: (1) Placing the food in shallow pans; (2) Separating the food into smaller or thinner portions; (3)Using rapid cooling equipment; (4) Stirring the FOOD in a container placed in an ice water bath; (5) Using containers that facilitate heat transfer; (6) Adding ice as an ingredient; or (7) Other effective method. CDI - Both items were moved to the walk-in freezer (WIF) and met the cooling parameters once cooled. |

6-501.11 Repairing - Premises, Structures, Attachments, and Fixtures-Methods (C) REPEAT - In the walk-in freezer, the floor is cracked at the base as soon as you enter. The coved based on the left side of the walk-in freezer door is coming off the wall. Physical Facilities shall be maintained in good repair. There is a work order in place for both repairs, and to fix the units over the summer break. |
