3-501.15 Cooling Methods (Pf) In both cold holding units, coleslaw was 51-52 F and turkey wraps were 43 F at 10:50 am. Person in Charge (PIC) stated items were prepared today and likely placed on line before being cooled down. Cooling shall be accomplished in accordance with the time and temperature criteria by using one or more of the following methods based on the type of food being cooled: (1) Placing the food in shallow pans; (2) Separating the food into smaller or thinner portions; (3) Using rapid cooling equipment (4) Stirring the food in a container placed in an ice water bath; (5) Using containers that facilitate heat transfer; (6) Adding ice as an ingredient; or (7) Other effective methods. CDI: Coleslaw and turkey & cheese wraps moved to walk in freezer; coleslaw cooled to 46 F and turkey & cheese wraps to 32 by 11:04 am. REPEAT. |
