33 0.50 Proper cooling methods used; adequate equipment for temperature control Yes No No 3-501.15 Cooling Methods (Pf): Salads prepped earlier today were tightly wrapped with plastic wrap before being placed into the cooling unit. Pizza sauce in the walk in freezer that had been used for prep today was in a deep plastic container with a tight fitting lid. Quickly cool foods. Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. CDI - PIC vented the pizza sauce and after an hour, it had only cooled one degree. REHSI recommended that the pizza sauce be placed into a long, thin metal pan to facilitate heat transfer. Salads were unwrapped and served within the lunch period.
