15A NCAC 18A .2812 b); Multiple container lids on the drain board had sticker residue on them. Spoons also had partially dissolved sticker residue on the food-contact portion. Two food scoops stored as clean were observed with food residue. A lid with excessive sticker residue on top that was labeled "pineapple" was covering a container of Oatmeal in the reach-in unit. Except for fixed equipment and utensils too large to be cleaned in sink compartments, equipment and utensils that are cleaned manually instead of in a dishwasher shall be washed, rinsed, and sanitized. Equipment and utensils shall be scraped, flushed with water, or soaked with water to remove food particles. Thoroughly clean all food-contact equipment prior to storing as clean. Do not reuse lids without cleaning first. CDI- all equipment removed for cleaning and placed in soapy water. |
